Our Around the World Dining Series kicks off June 19 with a bold, one-night-only culinary collaboration. For the first edition, we’re bringing the flavours of Toronto’s own Ninja Chef Nick Liu and his acclaimed restaurant concepts to Kingston’s waterfront — in partnership with experiential event agency Gold & Fife.
Chef Nick Liu — the creative mind behind DaiLo, Café Renée, and LoPan — joins AquaTerra chefs Brent McAllister and Rahul Bhatt for a menu that blends vibrant, rule-breaking dishes with a deep love of local ingredients and global influences.
Start your evening at The Patio with cocktails by LoPan, DaiLo’s signature snacks (yes, the Hakka wontons are on deck), then head upstairs for a multi-course dinner inspired by the French-Italian flair of Café Renée. From Toronto to Kingston, this is a table-spanning collab for food lovers who want a night that hits different.
To match the menu’s bold flavours, we’re pouring regional favourites from Grange of Prince Edward — including their bright Estate Rosé, vibrant Riesling Frizzante, and expressive County Gamay. Spearhead Brewery rounds out the list with crisp, local brews designed to meet every sip-worthy moment.

About Chef Nick Liu

His dishes—playful, refined, and deeply personal—have earned cult status and wide acclaim from outlets like Toronto Life, Post City, and Foodism.
A first-generation Canadian raised in Scarborough and Markham, Liu’s culinary journey began at George Brown College before taking him to top kitchens around the world, including Michelin-starred restaurants like The Fat Duck and La Gavroche. In Toronto, he trained at Scaramouche, Splendido, and Niagara Street Café, and later launched the pop-up GwaiLo, which laid the foundation for his flagship, DaiLo.
Liu’s work has been praised by critics and peers alike—The Globe and Mail’s Chris Nuttall-Smith called DaiLo’s Big Mac Bao “a stroke of genius” and their truffle fried rice “the single greatest rice dish in town.” DaiLo has ranked among Canada’s 100 Best Restaurants, and Liu has represented Canada on the world stage at events like the G20 Summit, the Pan Am Games, and the Queen’s Jubilee.
In addition to DaiLo and LoPan, Liu is also the co-owner and Executive Chef of Café Renée, a French-Italian brasserie located in Toronto’s historic Clarence Square. At Café Renée, he brings his passion for locally sourced ingredients and sophisticated, approachable dishes to a vibrant, neighborhood setting that celebrates Toronto’s culinary diversity.
Nick has brought his bold flavors and charm to screens across Canada, appearing on shows like Top Chef Canada and Iron Chef Canada, as well as guest spots on CityLine. Whether he’s whipping up daring dishes or sharing stories from his kitchen, his energy and creativity have made him a fan favorite. Beyond TV, Nick is a regular at food festivals and events like Taste of Toronto and the Toronto Wine & Food Festival, where he’s known for mixing serious skill with a playful approach—always pushing culinary boundaries while staying true to his roots.

Established in 2002, the winery spans 135 acres in Hillier, featuring over 40 acres under vine planted to Chardonnay, Pinot Gris, Riesling, Sauvignon Blanc, Pinot Noir, Gamay, and Cabernet Franc .
